Ingredients (makes 12 muffins)
- 600g carrot
- 3 eggs
- 1.5 teaspoon cinnamon
- 150 g melted butter or oil
- 240 g plain flour
- 3 teaspoon baking powder
Method
- Peel and cut carrots, boil for 5-mins until soft, drain water and puree with a blender
- Transfer carrots to a large mixing bowl, add 3 eggs and melted butter (150g)
- Mix together until smooth
- Add flour (240g sieved), baking powder 3 tsp) and cinnamon (1.5 tsp) and mix
- Portion into a buttered muffin tin
- Bake at 180°C for 25-30 mins
- Cool and then serve/freeze
