Carrot muffins

Ingredients (makes 12 muffins)

  • 600g carrot
  • 3 eggs
  • 1.5 teaspoon cinnamon
  • 150 g melted butter or oil
  • 240 g plain flour
  • 3 teaspoon baking powder

Method

  1. Peel and cut carrots, boil for 5-mins until soft, drain water and puree with a blender
  2. Transfer carrots to a large mixing bowl, add 3 eggs and melted butter (150g)
  3. Mix together until smooth
  4. Add flour (240g sieved), baking powder 3 tsp) and cinnamon (1.5 tsp) and mix
  5. Portion into a buttered muffin tin
  6. Bake at 180°C for 25-30 mins 
  7. Cool and then serve/freeze
